…Yes, but how do I extract the email off of gmail’s servers and save it to my hard drive in a folder that I wish to save it to?

If you use Linux, just do these steps:
    1. click Edit > Account Settings.
    2. Click your email’s account name.
    3. See the Local Directory’s location on your local hard disk.
    4. Click the browse button on the right of that box.
    5. A new window will open, right click on the icon of the folder then choose Explore menu.
    6. Copy all files in it.
    7. Paste them into a new folder you like.

On the new Thunderbird, do same steps until step 4th. And then follow by specifying the new folder location (the location of pasted files).
